Amatriciana always
This dish never leaves our menu — it’s a classic, done the NONA way.
We make its sauce by softening thinly sliced guanciale (surprise!), then slow-cooking it with organic tinned tomatoes from a cooperative in Puglia that we have worked with since the beginning.
Our special touch? The crunchy guanciale on top!
