The flavours and colours of organic, locally grown vegetables, eaten in the right season, never cease to amaze us. In fact, it’s a big reason why we do what we do at NONA.


So, with all the vibrant produce filling our plates right now, we thought this would be a good time to celebrate the vegetarian and vegan dishes on our menu this month. There are quite a few!

From Dries With Love


FDWL is our vegan pizza that changes each season, depending on what veggies are growing in abundance.


It’s a special nod to the organic vegetable farmer we have worked with since the beginning of the NONA journey, and who this summer is supplying us with basil, cherry tomatoes, and courgettes.


With a tomato base topped with roasted red pepper and aubergine, and a sprinkling of grated courgette, this month’s FDWL is the perfect mix of fresh and rich summer flavours.


Best eaten outside on the terrace with a cold glass of De Ranke beer.

Crudaiola and Aubergine


These two vegan beauties are exclusive to our August monthly specials.


The first, Crudaiola, is a simple summer combination of fresh marinated tomatoes, garlic, salty black olives, and basil. While the second, Aubergine, really lives up to its name with a cream of aubergine sauce, and chunks of oven roasted aubergine stirred through.


Both can be made vegetarian with a generous scoop of fresh stracciatella.

Two pestos are better than one


On our menu all summer, we have two pestos — Basilico and Trapanese.


Basilico, as the name may suggest, is a classic basil pesto mixed through our fresh fusilloni pasta and topped with organic Parmigiano Reggiano from our supplier, IRIS, in Emilia-Romagna.


Pesto Trapanese is originally from the city of Trapani in Sicily. It has a gentle orange colour from the combination of basil, tomato, and Pecorino Romano, and we give it some extra crunch with a topping of toasted almonds.


As with Crudaiola and Aubergine, an optional scoop of fresh stracciatella can be added to both of these dishes.
