Two pestos are better than one
On our menu all summer, we have two pestos — Basilico and Trapanese.
Basilico, as the name may suggest, is a classic basil pesto mixed through our fresh fusilloni pasta and topped with organic Parmigiano Reggiano from our supplier, IRIS, in Emilia-Romagna.
Pesto Trapanese is originally from the city of Trapani in Sicily. It has a gentle orange colour from the combination of basil, tomato, and Pecorino Romano, and we give it some extra crunch with a topping of toasted almonds.
As with Crudaiola and Aubergine, an optional scoop of fresh stracciatella can be added to both of these dishes.
